These pancakes are so easy to make and you can rustle these up in no time at all. Great for dessert, serve with a generous scoop of ice cream and enjoy. The pancake batter is the same as the savoury pancakes which I posted out a few weeks ago.....my apologies that this recipe was delayed...... Worth the wait!

Caramelised Apple and Maple Syrup Pancakes

Serves 4

 

Batter Recipe

6oz Plain Flour

400ml Milk

1 Egg- for Vegetarians omit the egg and add 1tbsp plain flour

Pinch of Salt

Oil- for frying

 

Method

Mix all the ingredients, apart from the oil into a smooth batter and leave for 15 minutes. For a variation you can also add 1tsp of cinnamon into the batter. Take a little of the batter and pour it onto a non stick pan and spread it around. Pour a teaspoon of oil around the edge of the pancake. Cook for a couple of minutes and then flip and continue to cook on the other side. Repeat with the rest of the batter.

 

Caramelised Apples

1 Gala Apple- or any sweet apple; Finely Sliced

Good Knob of Butter

2 tsp Muscovado Sugar

Maple Syrup- for Drizzling

 

Method

Heat the butter onto the frying pan and add the slices of apples, spread the slices to make sure they do not overlap. Sprinkle the sugar and let the apples get caramelised. Once done, take a spoonful and spread it over your pancake and drizzle a good amount of maple syrup on top. Serve warm with some ice-cream.
