These Vegetarian Fajitas have a lovely balance of vegetables and the cheese brings out a really meaty texture. You can also make it different another time by simply omitting the Hallomi and adding more vegetables of your choice or by adding a can of washed and drained Kidney Beans. These fajitas are very versatile dish. The Haloomi compliments the Vegetables very well and it is a very satisfying and filling dish!!
What you need:
Ingredients No 1
2tbsp Olive Oil
1 Red Onion
1 Green Pepper (Sliced not too finely)
1 Red Pepper (Sliced not too finely)
1 Yellow Pepper (Sliced not too finely)
250g Sliced Chestnut Mushrooms or Closed Cup Mushrooms will do.
1tsp Chilli Flakes
Take a non stick frying pan. Heat the oil, and fry the onions first just to soften them. Add the rest of the ingredients and cook on fairly high heat as the vegetables will release water. Also you want a slight crunch to the vegetables. Cook on high flame until the water has evaporated and the vegetables have a slight crunch. Add the Chilli Flakes and 1/2 tsp of Fajita seasoning. The seasoning is already salty so taste the mixture before adding any more.
Leave this mixture aside.
2tsp Olive Oil
1 Big Clove Garlic (finely chopped)
3 packets (250g each) Haloomi Cheese (cut into pieces)
2tsp Fajita Seasoning
Large Handful Chopped Coriander
Take a non stick pan. Add the oil, garlic and the Hallomi. Cook on high flame stirring in-between to prevent burning and sticking to the pan. The cheese will release water, keep on cooking until all the water has evaporated and the Haloomi cheese has a golden colour. Add the Fajita seasoning. Again do not add too much as it is quite salty and also the Haloomi cheese is salty.
Mix together the Haloomi with the vegetables in ingredients 1.
Add in the coriander last as this will give a lovely fresh taste to the fajitas.
Serve with Tortillas, Soured cream and freshly homemade Guacamole. If you do not have time to make the guacamole then shop bought is also fine.
To make Fresh Guacamole
1 Large Ripe Avocado
1 Tomato (Deseed)
1 Small Garlic Clove
1 Small Slice of Onion
Juice of 1 Fresh Lemon
1tbsp Chopped Coriander
Salt and Pepper to taste
