This has always been a firm favourite for many people when going to eat at Chinese restaurants. Now you can make this dish from scratch in your own home. It is a very simple to make and also tastes delicious!
1 ½ IB White Firm Fish- Cut into Chunks
5 Spring Onions
3 Cloves Garlic- Crushed
1 ½ Inch Stick Ginger- Grated
1 Large Red Chilli- Finely Chopped
1tbsp Soy Black Beans-Salted (Available in Chinese Supermarket)
1 Cup Vegetable or Chicken Stock
2tsp Corn Flour
3tbsp Light Soy Sauce
To Variate this dish; you can also add large chunks of red and green peppers. You can add these in with the fish.
Take a wide bottomed pan. Add the oil, spring onion, garlic and ginger. Let this sauté for a few minutes. Add the black beans and stir for another few minutes. Add the rest of the ingredients apart from the fish. Allow to boil and reduce heat. Place the fish chunks in the sauce and simmer with the lid on. Do not keep stirring as this will break the fish. Once the fish has cooked and the sauce thickened, you are ready to serve. You can serve this with noodles or rice.
