Well guys, New Years Eve is approaching fast and for those of you who are hosting parties, this is a fantastic and quick snack that tastes really delicious. You can make this in advance and just reheat in the oven to make it crispy again.
Makes 30-40 Pinwheels
2 Sheets of Ready Rolled Puff Pastry
340 Black Olives (Pitted)
Large Handful of Fresh Parsley
7 Sundried Tomatoes in Oil (Drained)
2 Heaped tsp Green Pesto
Blend all the above ingredients in a food processor until finely chopped. Divide the mixture and spread it all over each puff pastry sheet. Leave a little gap on the sides of the pastry to avoid the mixture from oozing out onto the sides. Now roll the pastry from the longest side so that you get more pinwheels, and start to form a long sausage shape. Cut the sausage into 1cm thickness and place them onto a baking tray. Repeat with the other puff pastry sheet. Cook in a preheated oven at 180c until golden in colour. Enjoy!
