This is a great snack which can be made really quickly! These wedges have a slight spiciness and tastes wonderful with the herbs. Kids will definitely love them and if you want to take the spice out then just omit it from the recipe. My Kids love it with garlic mayonnaise, a real winner!

Potato Wedges Served With Garlic Mayonnaise


8 Small White Potatoes

1tbsp Olive Oil

1tbsp Plain Flour

1tsp Dried Thyme

Pinch of Paprika

Pinch of Turmeric

Salt to taste

Freshly Grounded Pepper

½ tsp Coriander Powder

1tsp Cayenne Chilli Powder

Olive Oil for Drizzling



Wash and dry the potatoes. Cut them lengthwise and then each one in half again. Boil in salt water for 8 minutes. Drain and cool.

Meanwhile, in a bowl, add the flour and all the other ingredients apart from the oil. Once the potatoes are cooled completely, scatter the flour mixture onto the potatoes and toss so that they are all fully coated. In a baking tray, add the tablespoon of oil and then add the potatoes. Spread them out so that they cook evenly. Finally, drizzle some olive oil onto the potatoes and cook in a pre heated oven at 190c until golden and crispy.


For the Garlic Mayonnaise:

Take 4 tbsp mayonnaise into a bowl. Mix 1 crushed clove of garlic and 1tbsp freshly chopped coriander. Serve with the wedges. Yummy!
