I was so happy the way this recipe turned out! It looked amazing and tasted delicious! You can serve this dish as a starter or even as a salad. It will certainly leave your family and friends impressed! The aubergine and caramelised peppers really went well with feta cheese. The Basil dressing brought all the flavours together. To variate it you can also use fresh sliced mozzarella instead of feta cheese.

Roasted Aubergine Stack with a Basil Dressing

Makes 4-5 stacks


1 Baby Dutch Aubergine, sliced into circles of ½ cm thickness. It is important you get this variety as it has a lovely sweet flavour.

1 Yellow Pepper- Sliced Finely

1 Fresh Tomato- Sliced Finely

Green Pesto

Feta or Mozzarella Cheese- sliced finely

Olive Oil to season

2tsp Honey




Season the aubergine circles on both sides with salt and pepper and spread them out onto a baking tray. Drizzle some olive oil on top of each one, making sure you cover both sides. Cook in a pre heated oven on 190c until soft, turning occasionally. Do not brown them. Once cooked, leave aside to cool.

Meanwhile take the peppers and place them in a baking tray. Add the honey on top and mix together. Cook in a preheated oven on 190c until the peppers have softened and slightly caramelised.  Again do not brown.  Once cooked, leave aside to cool.


To Make the Basil Dressing you will need:


2tbsp Olive Oil

1tbsp Balsamic Vinegar

Salt to taste

Freshly Grounded Pepper

½ tsp Sugar

1 Garlic Clove- Crushed

Good Handful Fresh Basil- finely chopped. Reserve a few leaves to decorate the stacks.


Mix all the above ingredients together and leave aside.



Now for the fun part- Assembling the Stacks; I have assembled the stacks this way but you can do it any other way. You can experiment, as long as you have all the ingredients together.


The following all go on top of each other, hence the Stack.


A slice of Aubergine

Spread a little Pesto on top

A slice of Feta or Mozzarella cheese

Slice of Tomato

Slice of Aubergine

Spread a little Pesto

Add some Peppers

Slice of Tomato

Slice of Aubergine

Finally a layer of Peppers


Drizzle a little of the Basil Dressing on each one. Then decorate each stack with a Basil leaf. Beautiful!! Enjoy!
