This is a lovely, refreshing dessert and as we are approaching the sunny spring weather, I thought it would be really nice to make something which makes you feel really ‘summery’. Strawberries are in full season at the moment and what a nicer way of enjoying them other than in a cold dessert! You can use any fruit you like but I feel the orange essence and strawberries really go well together. The best thing about this tart is that is very quick to make, so you can relax and enjoy the lovely sunshine!
Readymade Sweet Pastry Case- Approx 8 inches
250g Mascarpone Cheese
120ml Double Cream
1tsp Orange Essence
½ tbsp Icing Sugar- (Add more if you like it sweeter)
8-10 Strawberries- Sliced Vertically For Decoration
Flaked Almonds- For the Topping
In a bowl, whisk the mascarpone, double cream and sugar until smooth. Add the orange essence and give it a mix. Try it at this stage and if you like it more sweet add more sugar. If you like the orange taste and would like it more enhanced then just add another ½ tsp of the essence. You can also omit the essence if you wanted to add other fruits. Once you are happy with the flavour, spread the mixture evenly onto the pastry. Sprinkle some almonds and decorate with the strawberries. Sprinkle again with some almonds.
Ready to serve. Delicious!
