This is a lovely starter for a Chinese meal. It is very quick to prepare and also tastes delicious. My aunt made this soup when I went to visit her and I have varied it slightly. It tastes really lovely and is also very healthy.
1 Big Can Sweet corn (drained and washed)
1 Small Can Sweet corn (drained and washed)
1-2tbsp Soy Sauce
Salt to taste
Freshly Grounded Black Pepper
½ Cup Milk
Corn Flour (if needed to use as a thickening agent)
In a pan, melt the butter and sauté the small can of sweet corn along with the soy sauce and black pepper.
In a food processor, grind the big can of sweet corn. Once grinded, sieve it through a big holed strainer into the pan with the butter.
Once this mixture starts to boil add the milk and salt. Let it boil for 10 minutes. After this time you will see whether the consistency is correct like a soup or you may feel it is a bit watery, in which case you can add ½ tbsp of corn flour to thicken it. If it still hasn’t thickened then add another ½ tbsp corn flour. This should now look like the right consistency. Check for salt and pepper and add more if you prefer.
Serve hot with a drizzle of chilli sauce (optional).
