These mini burgers are so easy to make and also very healthy. I have baked the burgers which makes it healthier. This is a great dish for kids and is also a very good way of introducing fish to their diet. You can use tinned salmon if you prefer.
Makes 18 Mini Burgers
2 Fillets of Fresh Salmon
2 Medium Sized Potatoes- Peeled and roughly chopped, boiled, drained and mashed.
1tbsp Olive Oil
1 Red Onion- Finely Chopped
1 Clove of Garlic- Crushed
2tbsp Chopped Parsley. You can also use Dill for a variation.
2 Shredded Carrots

Season the fish and bake in the oven until cooked. Once cooked, leave to cool and flake the fish into a bowl. Meanwhile, heat the oil in a pan and add the onion and garlic. Sauté until softened. Turn off the heat and add the parsley/dill. Mix the mashed potato and salmon in with the onion. Lightly stir and add some salt and pepper if needed. Form small balls and press to flatten. Dip each burger into the breadcrumbs and arrange onto a baking tray. Once all the burgers are coated with the breadcrumbs, bake in a preheated oven at 200c until crispy and golden in colour.
Serve in a bun with lettuce, shredded carrots and tartar sauce. You can even have chopped onion, tomato as a variation. Serve warm. Yummy!
