Warm Apple and Nut Cake
I love a warm pudding this time of the year. Apples are especially delicious when cooked and really has a great flavour in cakes. I have used pistachio and almonds in this and I think it goes particularly well with apples. I have also added coconut to make it a slightly different texture and flavour. Have this cake warm with maybe a dollop of vanilla ice-cream............... Delicious!
Very Quick Fruit Dessert
This is the quickest dessert you can make. I have used homemade cake for this recipe but you can use shop bought. Seasonal fruit works best and at present Mangoes, Strawberries are in full season. I have also used Papaya in this recipe.
Vegetable Jacket Potatoes
Jacket Potatoes are the ultimate winter warmer dish! The freshly baked potato with melted butter and cheese oozing out is such a comfort. I have added a healthier and almost guilt free potato, by adding a good amount of vegetables. You can use any vegetables of your choice, just simply follow the basic cooking method I have used and you will soon enjoy a lovely, healthy and satisfying dish!
Strawberry Tart
This is a lovely, refreshing dessert and as we are approaching the sunny spring weather, I thought it would be really nice to make something which makes you feel really ‘summery’. Strawberries are in full season at the moment and what a nicer way of enjoying them other than in a cold dessert! You can use any fruit you like but I feel the orange essence and strawberries really go well together. The best thing about this tart is that is very quick to make, so you can relax and enjoy the lovely sunshine!
Sea Bass in Spinach and Tarragon Sauce
This is the most simplest of sauces which goes well with sea bass. The Tarragon has an aniseed taste and needs only a little to compliment the mild flavour of the fish. You can add more if you like a strong flavour. It is simply delicious and is really quick to make. The spinach makes this dish very healthy and accompanies the tarragon sauce beautifully. Serve with any vegetable of your choice. You can use any white fish in this recipe but sea bass is ideal.
Semolina Spinach Idlis
I love South Indian food. These Idlis are so easy to make and taste really delicious. They are packed full of healthy vegetables and the best thing about these Idlis is that it does not need any fermenting overnight, like the rice and dal Idlis. Great dish to rustle up when you have unexpected family or guests over!
Quick Middle Eastern Baked Fish
This is such a fast dish that you can make in no time at all. It also tastes beautiful, without overpowering the delicate flavours of the fish. You can keep the fillets ready in the fridge and just pull them out when you are ready to cook, making it a very flexible option if you have a busy schedule!
Potato Wedges Served With Garlic Mayonnaise
This is a great snack which can be made really quickly! These wedges have a slight spiciness and tastes wonderful with the herbs. Kids will definitely love them and if you want to take the spice out then just omit it from the recipe. My Kids love it with garlic mayonnaise, a real winner!
Portobello Mushrooms Stuffed With Spinach and Rice
This is a great way to use up any left over rice and is a lovely satisfying, filling dish. I served this with some sea bass and it really worked well together. The spinach and the garlic in the rice bring out totally new flavours and tastes amazing.
Pizza Baguette with Courgette and Aubergine
This is a great alternative to pizzas. I wanted to share this recipe because it is really simple and quick and tastes really good! I made this dish in a hurry once by just creating whatever I had in the fridge. I ended up making this great wholesome version of a pizza. What I enjoyed about this is the different vegetables that I used and I guess you could do the same with whatever vegetable you have in the fridge. So have a go........
