This is a great dish to have when you are pre-preparing in advance, and is ideal for a party. This is a great dish that is stress free and which tastes great! You can even make this the night before and just warm through the next day. You can add any vegetables of your choice. Serve with a tomato salsa, guacamole and sour cream. Perfect!
Great Mexican Vegetarian Party Starter
This is such a quick and easy starter to do and has a great taste. The refried beans are very versatile and can be used in many different dishes. I have chosen to make it as a starter. Again you can make the beans the night before and therefore giving you time to sort other things out on the day of your party!
Tortilla Stack
This is a lovely Mexican dish which you can enjoy with family and friends. I have made it slightly unusual as instead of rolling each tortilla I have stacked them on top of each other which looks really appealing and also resembles a little like a Mexican pizza! The tomato sauce adds a different taste and you can add as much or as little as you like.
Stuffed Peppers in Rich Tomato Gravy
This is definitely top in my books! I am not a great fan of stuffed peppers but this I love. I had this dish at my friend’s house and I fell in love with the flavours. The rich tomato gravy is truly delicious! You can use this same gravy for many other dishes. You can also stuff the peppers with a paneer mixture which will also give it a different edge!
