Lamb Kebabs
These are so delicious. The best thing is that these kebabs are so simple to make and yet really flavoursome! They go really well with a lovely, cooling cucumber and yogurt dip. To make them slightly different, I have coated the kebabs with finely chopped red and green peppers which give a slight crunch and add a bit of colour. You can prepare this in advance and also make little balls with toothpicks inserted in them to make a great cocktail starter. Have a go and you’ll see how easy they are to make!
Easy and Tasty Rosemary Lamb Chops
This is a wonderful and quick dish to make. I have served it with potato and spinach patties and some boiled vegetables. Lamb always goes really well with mint and rosemary but add a few different ingredients and you have a fantastic taste.
Karahi Chicken
This is a beautiful chicken dish which is cooked in an Indian Wok, hence giving the name ‘Karahi’ Chicken. It has lovely thick gravy and a great blend of spices. The Capsicums in this dish gives a really different flavour.
Kashmiri Lamb
Mmm, this is a great dish for lamb lovers. It has a really rich and fragrant taste. Usually when you eat any meat dish curry in a restaurant, it has a un tempting layer of oil, which really makes the dish so heavy! I have not used much oil in this dish and still the lamb tastes great and you also feel quiet light by the end of it!
Pepper Chicken and Spinach Biryani
This is a fabulous twist on the chicken biryani. It is full of flavour. The spinach in this dish brings out a really different element to the dish. You can taste the kick of pepper as you bite into the rice and also a lovely fragrant saffron taste. Really nice rice dish; you have to try it!
Indian Style Mini Chicken Kebab Rolls
These are so tasty and packed full of flavour. They are also very versatile and can be used as a starter, as a main, stuffed in pitta bread with salad or even in barbeques. Kids will love them too; just omit the chilli if they find it too spicy.
Chicken Niblets (Wings) in a Green Sauce
This a finger licking dish and great served as a starter or a main dish and as you will have noticed can be served with chicken for the meat eaters and Paneer for the vegetarians. The green sauce is made with lots of fresh coriander which brings out a different taste in the chicken. Other ingredients include spinach and fenugreek (optional) and hence the green sauce. With this marinade you can also cater for vegetarians simply by omitting the chicken and using Paneer (Indian cheese) instead.
Tasty Chicken Biryani served with a Cucumber Raita (a cooling yogurt dip)
This Biryani has got the most mouth watering flavours. The marinade for the chicken has an immense amount of tastes which really bring out the authencity of this dish. Many different ways of cooking this dish were tried and tested and finally this has got to be the ultimate in all Chicken Biryanis. In my opinion, once you have made this dish you will be very reluctant to order it in a restaurant!
