Fish & Seafood

This is the most simplest of sauces which goes well with sea bass. The Tarragon has an aniseed taste and needs only a little to compliment the mild flavour of the fish. You can add more if you like a strong flavour. It is simply delicious and is really quick to make. The spinach makes this dish very healthy and accompanies the tarragon sauce beautifully. Serve with any vegetable of your choice.  You can use any white fish in this recipe but sea bass is ideal.

If you enjoy fish, then do try to make this at home. I have used fresh tout fillets instead of salmon as they are thinner and you can roll it better; the salmon also has a very strong flavour, whereas trout is milder. It tastes really nice with the dill and the creaminess of the goats cheese. This dish looks very impressive and also gives it a different way of presenting the fish. Served it with roasted baby potatoes and garlic shiitake mushrooms and it will be a real winner!

This is a lovely salmon dish which you can make in these cold winter months. It has a real warming taste making you feel really good! This marinade has great flavours of orange with honey and a ginger and garlic blend. I have simmered the marinade to get a really rich, deep and sticky sauce, just perfect for a glaze on the salmon. It’s a real winter warmer and in summer great for barbeques!

This is one recipe you have to try if you are a fish lover. Tilapia is a white fish which holds itself very well when cooked. It also does not taste very ‘fishy’ and has a resemblance to Cod in taste. This makes a very good change from other types of fish. What I love about this dish is that all the masala is cooked in foil with the fish and makes the fish taste so succulent! I have also added some ingredients, like fresh dill and coriander chutney to give it a different element to the dish. Definitely one you should try!

These mini burgers are so easy to make and also very healthy. I have baked the burgers which makes it healthier. This is a great dish for kids and is also a very good way of introducing fish to their diet. You can use tinned salmon if you prefer.

Wow these are great! Pancakes are really versatile and these in particular are for seafood fans! The filling has a lovely creaminess and is mixed with smoked salmon, prawns and mushrooms. You can make the pancakes in advance and then whip up the filling in no time at all!

These prawns are really tasty and not your average satay sauce. It has a slight Malaysian influence and taste delicious. I have used many ingredients to give this dish great flavours and a slight lift to the sauce.

This is a lovely change from any fish curry. When I was making this dish I wasn’t sure whether the salmon would be quite a full flavoured fish for this recipe or not! But as soon as I sat down and tried it, wow this was a dish I’d definitely be making again. The salmon was actually not as full flavoured in the spices; somehow the spices tamed this flavour down and made it a simply amazing fish curry. You have to try for yourselves!

These are the loveliest Salmon fish cakes. Salmon is quiet a full flavoured fish and can be quite overpowering. I found when you add the dill; it complements the salmon beautifully and works great together; taking away the strong flavour of the fish. The tomato Vinaigrette adds a bit of freshness and juiciness to the dish and goes beautifully with the fish cakes.

I had this fish dish in restaurant and I was amazed by its flavours and simplicity. I had to make it at home, so I have made it slightly different and tastier! It is a very quick dish you can rustle up and is also a very healthy dish as there is no frying! The tangy but spicy flavour really adds a kick to the fish.
