Stuffed Vegetable and Cheese Paratha (Indian bread Stuffed with Vegetables and Cheese)
These are a lovely variety of paratha. I have used a wide range of vegetables and have not used any potato which is usually used in traditional parathas. It’s a great way to disguise vegetables for fussy eaters. Also it is a wholesome dish which does not need any accompaniments. You can eat them hot or cold; take them in lunch boxes and picnics. It appeals to children as there is a nice cheesy layer on top of the vegetables. If you are not keen on cheese you can omit it from the recipe.
Quick Tasty Bhel
This is such a quick snack that you can rustle up in no time at all! I used whatever I could find in my kitchen cupboards and came out with this great bhel. The addition of fruit brings out a natural sweetness to the bhel. You can try to use any fruits; maybe chopped apple, pomegranate or even a mixture of the three.
Quick Chilli Paneer Stir Fry
This is a lovely starter which tastes delicious. It is very quick to make and has similar flavours to chilli paneer but this dish is not as saucy as chilli paneer. It has a slight sweetness which goes very well with the garlic and chilli.
Moong Dal Chillas (Indian Lentil Pancake)
These pancakes are a great alternative to Dosa. I have only used Split yellow Moong Dal. The garlic and ginger really bring out a great flavour. To make this dish more satisfying, I used finely chopped onions and tomatoes on top. For the kids I also added grated cheese, which actually tasted better! Serve hot with a Green Chutney! Delicious.
Desi Style Chilli Paneer Pizza (Indian Pizza)
Wow! You have got to try this Desi Pizza. When I first made this chilli Paneer pizza, I was very unsure on how the taste would come out but as soon as I started to assemble all the ingredients onto the pizza, I knew this is the ultimate one!! If you like a good spicy feel to the pizza, well this is definitely the one to try. The marinated paneer gives a very unusual flavour to the pizza but it works extremely well with all the other ingredients.
This is definitely a speciality which all the family will love!
Indo Chinese Paneer Rice
If you love a mix of flavours then this is a great rice dish. It has subtle flavours of Chinese and Indian flavours. You can eat it as a meal on its own or serve it as part of an Indian or Chinese dinner.
Medley of Potatoes
This is a great side dish to serve with fish, roast or any main dish. I have used sweet potatoes and white potatoes to give it a slightly different taste. It is very simple and quick dish and tastes really nice. As Christmas is approaching, I thought it would be nice to give an alternative to roast potatoes which is usually used. Sweet potatoes are a great alternative and also very healthy for you. You can use all sweet potatoes if you prefer.
Chickpea Tikka Masala with Spinach
I made this dish to make a different sauce for the chickpeas as I always make the same sauce at home. So I was experimenting and I came across this. It tastes fabulous and is now a regular at home. The tikka masala brings out a real restaurant taste and is different with the chick peas. Have a try and you will be pleasantly surprised!
Pav Bhaji (Without Potatoes) Classic Indian Roadside Dish
This is a wonderful and a very nutritious dish using an array of vegetables. Classic Pav Bhaji is made out of potatoes and cauliflower but I have used raw bananas instead of potatoes. You will not be able to taste the difference believe me! If you really detest raw bananas then use three medium potatoes instead and follow the same instructions for the recipe. Left overs can be turned into vegetable toasties for a quick and simple snack, lunch or even dinner!
Cauliflower, Carrot and Pea Curry
This is a very healthy curry using all the summer vegetables. I have not overcooked any vegetables used in this curry as I wanted to retain its goodness. This dish is particularly great for vegetarians as it has a good variety of vegetables.
