Blueberry Loaf
This is one of my favourite cakes! It tastes wonderful and looks amazing. Sometimes blueberries can be quite sour when eaten raw but the sourness will disappear when the loaf is cooked and will taste really lovely. It is also a great way to give children their one of five a day!

Serves 4-6
Ingredients
250g Self Rising Flour
150g Caster Sugar
Pinch of Salt
2 Eggs
125g Butter- Softened at Room Temperature
Juice of a Lemon
200g Blueberries
1tsp Vanilla Essence
6 tbsp Milk
Method
In a Luminarc bowl, whisk together butter and sugar until creamy. Add in the eggs and beat again. Pour the milk, vanilla essence and salt. Mix well. Add the flour into the bowl and mix with the ingredients. Now add the lemon juice and blueberries and fold into the flour. Pour this mixture into a baking tin and cook in a pre heated oven at 190c for approximately ½ hr to 40 minutes. To check if the cake is cooked, poke a toothpick in the centre of the cake, making sure you poke it right the way through to the base of the tin. If the toothpick comes out clean then it is cooked and if it does not then you need to cook the cake a little longer.
Leave to cook before slicing. Really Delicious!!
