Greek Chicken
I have made a totally Mediterranean inspired chicken dish. The beautiful fresh flavours of the lemon and orange with the fresh herbs compliment the spices in this dish really well. I have used chicken thighs but you can also use chicken wings or chicken breast.

Ingredients
4 Chicken Thighs
3tbsp Olive Oil
1 Large Onion- Finely Sliced
4 Cloves Garlic- Minced
1tbsp Fresh Thyme
2tsp Vegetable Stock Powder
20g Fresh Parsley
1tsp Cinnamon Powder
2 tsp Ground Cumin
Pinch of Turmeric
1 Lemon- Reserve 3 Slices and the rest squeeze the juice
Juice of ½ Orange
½ tbsp Corn Flour
Handful of Green or Black Olives

Method
In a large bottomed pan, heat the oil and add the onion. Sauté until translucent. Add the garlic and the cumin and cinnamon. Stir for a few minutes. Now add the fresh herbs, stock powder, chicken and turmeric. Give the chicken a good stir so that all the spices are coated well on the chicken. Add some water, enough to cover the chicken and cook on a low heat until nearly tender. At this point add the juice of the lemon and orange and finally sprinkle the olives on top. Cook the chicken for a further few minutes or until cooked through. Turn off the heat and then place the lemon slices on top. Do not stir the lemon slices or the skin of the lemon will bring bitterness to the dish. This is purely for decoration.
Ready to serve!
