Seafood Pancakes
Wow these are great! Pancakes are really versatile and these in particular are for seafood fans! The filling has a lovely creaminess and is mixed with smoked salmon, prawns and mushrooms. You can make the pancakes in advance and then whip up the filling in no time at all!

Makes 6-8 Pancakes

Basic Pancake Recipe
4oz Plain Flour
1 Beaten Egg
300ml Milk
Pinch of Salt
Oil for Frying

Method
Mix the flour and salt in a bowl. Slowly pour the milk and whisk it to get rid of all the lumps. Add the beaten egg and mix until you have a smooth batter. Leave for 15 minutes. Heat a non stick frying pan and add a little oil to coat the base of the pan. Pour in enough batter to thinly coat the base of the pan. Once you see bubbles appear turn over and cook until golden in colour. Repeat with the rest of the batter.
Leave aside until needed.

Ingredients for the Filling

 150g Mushrooms- Chopped
60g Smoked Salmon- Tear into large pieces
220g Fresh Cooked Peeled Prawns
AÂ Good Handful Chives- Chopped Finely
4-5 tbsp Double Cream- You may want to use more if you like it creamier
Salt to taste
1tbsp Olive Oil
1 Clove Garlic- Finely Chopped

Method
Heat the oil in a wok. On a high heat add the mushrooms and cook until tender and the water has evaporated. Add the cream, garlic and chives. Cook until the cream has thickened. Turn the heat off and add salt, prawns and the smoked salmon.
When you are ready to serve, simply warm the pancake onto the pan and spoon some filling onto the pancake. Yum.
