Stuffed Paneer Pakora (A Great Party Biting)
This snack is great for parties and now that Christmas is approaching I thought I would give you a quick and easy Indian style party canapé. You can make the filling in advance and freeze it. You can even cut the paneer chunks the night before so you have more time on the day of your party. Simply take each pakora and put a toothpick through it, making it easier for your guests to nibble on. Place them all onto a nice plate and its ready to be served as a party finger food. Your friends and family will love it!

Makes 20 Pieces

Ingredients for Pakora
Â
1 Block Paneer- Cut into 20 Bites Sized Pieces
5tbsp Gram Flour
1 ½ Level Tsp Mango Powder/Amchur
1tsp Chilli Powder
1tsp Crushed Ginger and Garlic
1tsp Roasted Cumin Powder
1tsp Garam Masala
Salt to taste
Oil for Deep Frying

Ingredients for Mint and Coriander Chutney

½ Bunch of Fresh Coriander
½ Bunch Fresh Mint Leaves
Salt to taste
2-3 tsp Sugar
1 Green Chilli
Juice of ½ Lemon

Mix all the above ingredients for the chutney into a coffee grinder and blend until smooth. You may not need all the chutney and you can freeze the rest for another time.

Method for the Pakoras
Â
Take all the ingredients for the pakora mixture into a bowl, apart from the paneer. Add water gradually to form a thick batter. Taste for salt and add more if needed. Take the paneer pieces and put a slit into each one, being very careful not to cut all the way through.
Take the chutney into a teaspoon and carefully fill into the slit. Take the paneer piece and gently coat it into the batter and deep fry. Continue to do each one. Fry until light brown in colour.
Serve either with the chutney made or with any chutney of your choice.Â
