Stuffed Peppers in Rich Tomato Gravy
This is definitely top in my books! I am not a great fan of stuffed peppers but this I love. I had this dish at my friend’s house and I fell in love with the flavours. The rich tomato gravy is truly delicious! You can use this same gravy for many other dishes. You can also stuff the peppers with a paneer mixture which will also give it a different edge! Ingredients For the stuffed Peppers

6 Baby Peppers Mixed or use the standard peppers and cut into fours- scoop the seeds out
2 Boiled Potatoes
1tbsp Oil
½ tsp Whole Cumin/Jeera
1tsp Ginger/Green Chilli Paste
1 Finely Chopped Onion
Salt to taste
¼ tsp Turmeric
1tsp Garam Masala

Method
In a pan, heat the oil and add the jeera. Let this sizzle then add the onions. Let this cook until translucent. Add the ginger and chilli paste. Add the potatoes and the rest of the ingredients. Stuff the peppers with this mixture and leave aside.
