Tilapia Fish Masala
This is one recipe you have to try if you are a fish lover. Tilapia is a white fish which holds itself very well when cooked. It also does not taste very ‘fishy’ and has a resemblance to Cod in taste. This makes a very good change from other types of fish. What I love about this dish is that all the masala is cooked in foil with the fish and makes the fish taste so succulent! I have also added some ingredients, like fresh dill and coriander chutney to give it a different element to the dish. Definitely one you should try!

Ingredients for the Fish and Marinade

4 Fillets of Tilapia Fish
1 tsp Ginger and Garlic Paste
½ tsp Turmeric
1 tbsp Chopped Fresh Dill
Salt to taste
½ tsp Coriander/Cumin Powder
½ tsp Chilli Powder
½ tsp Fish Masala or Garam Masala
1 tbsp Fresh Lemon Juice

Marinade all the above for at least 1 hour. The longer the marinade the better the fish will taste.

Ingredients for the Masala

1 tbsp Olive Oil
¼ tsp Mustard Seeds
5 Shallots- Finely Chopped
1tsp Ginger and Garlic Paste
4-5 Curry Leaves
1-2 tsp Green Coriander Chutney
250g Vittoria Tomatoes- These are like small baby tomatoes but very sweet in flavour- Chopped
1tsp Fish Masala or Garam Masala
1tsp Turmeric
Salt to taste

Method
In a wide non stick pan, heat the oil and add the mustard seeds. When the seeds start to pop add the shallots, garlic and ginger paste and curry leaves. Cook on a low heat until the shallots start to take on a golden colour. Add all the dry masala powders and then add the tomatoes. Then add the green chutney and a little water just to loosen the sauce. Cook the masala until all the water has evaporated and the sauce has thickened.
Finally, take the fish and place each one onto a separate piece of foil. Divide the thick sauce equally and spread it onto the fish. Cover the fish with the foil and cook in a preheated oven at 200c for approximately 15-20 minutes. Serve with plain or lemon rice. Simply Delicious!
